There is nothing quite like having homemade pizza. Timeless, gooey, cheesy goodness. I had been looking for crust alternatives to make a delicious and nutritious, guilt-free pizza and I came across this great option! Have it on its own, or with a great salad on the side and this is a quick and delicious dinner option, or great for a weekend lunch!



The Ingredients

4 cups of Kale, washed, cut and trimmed

2 large eggs

1 cup of grated mozzarella cheese

2/3 cup of bread crumbs, gluten free or regular

1 t.s of dried oregano

1 t.s of chilli flakes

1 t.s of dried basil

1/2 t.s of salt

1/2 t.s of pepper 


Best part is that everything goes in the food processor, while you pre-heat the oven to 350 degrees. Mix it all up until the mixture starts forming a ball of "dough". 


Once its mixed, remove it from the food processor and form a ball. The "dough" is quite sticky, so its best to line the baking sheet and your hands with some olive oil. 


Flatten out the dough into the perfect pizza crust. Now just choose your favourite toppings, mine are a sprinkle of mozzarella cheese, some fresh tomatoes and fresh basil! Nothing quite like the simple comforts of a Margarita pizza! Also great to top it with all the veggies you can find in your fridge. You may choose to include sauce, but it's great without it too!

Now just pop it in the oven for 25-30 minutes, and ENJOY! 

If you like your crust extra crispy, you can pop the crust in on its own for 20 minutes, take it out to top it and then put it back in for another 20 minutes.
