In the middle of a jam-packed day, there is nothing better than having a delicious and energizing snack at the ready. My Coco-Mint energy balls are filled with wholesome ingredients that provide long-lasting energy, not just a sugar spike. The bonus is that they are super easy to make and they taste like dessert (which I am a huge fan of!). 

The Ingredients

2 cups of unsweetened shredded coconut 

2/3 cup of organic virgin coconut oil (slightly melted)

3 tablespoons of good quality cocoa powder 

1 tablespoon of sesame seeds

1 tablespoon of chia seeds

1 tablespoon of honey

1 teaspoon of natural peppermint flavour

The process is simple. Simply combine everything in a bowl until you get an even paste-like consistency. Then begin to form your balls! No cooking, baking, or sifting required! 

You should be able to get 15-16 golfball sized balls. Sprinkle with some shredded coconut, and throw them in the fridge to set. Last step is simple...enjoy!
